Current Research Interests

The research team is currently working on two main areas in sustainable materials:

1) platforms to culture sustainable, cost sensitive clean meat.

2) valorisation of food waste into high quality food.

Clean meat is an emerging industry but one of the major challenges is the cost. We are developing platforms that are cost sensitive and less reliant on expensive culture media which forms the bulk of the cost. For the valorisation project, we work on developing high quality food from raw seafood waste.
